To remove mildew, mildew and disinfect the cold storage, use acid disinfectant first. The bactericidal effect of acid disinfectants is mainly to coagulate the protein in the bacteria. Common disinfectants include lactic acid, peroxyhexanoic acid, bleaching powder, formalin and so on.

1) Causes of peculiar smell in cold storage
The so-called peculiar smell, that is, the cooking ingredients and food in the cold storage under the influence of external factors, through physical and chemical changes, produce an abnormal smell. Over time, this smell will adhere to the walls, ceilings, equipment and tools of the cold storage. on. The peculiar smell in the cold storage is generally due to the following reasons:
There is a peculiar smell in the cold storage before the food is imported.
Before entering the cold storage, food has spoilage, such as spoiled eggs, meat, fish, etc.
The cold storage where fish has been stored, and the food such as meat, eggs, or fruits and vegetables is stored without washing, causing the smell to become infected and deteriorate.
The cold storage is not well ventilated, and the temperature and humidity are too high, causing molds to multiply and produce a moldy odor.
The leakage of the refrigeration pipe of the cold storage, the refrigerant (ammonia) corrodes into the food and causes the peculiar smell.
The temperature in the cold storage does not drop, causing the meat to deteriorate and spoil and produce a spoiled smell. This situation mostly occurs when fresh meat is not frozen or completely frozen and then transferred to storage.
Different odor foods are stored in a cold storage warehouse, causing food odors to infect each other.
2) Methods to prevent the odor of cold storage
Foods that are put in the cold storage must be inspected, and only those that have not deteriorated can be put into storage.
The cold storage warehouse must not have any peculiar smell before the purchase. If there is a peculiar smell, it must be processed by technology to eliminate the peculiar smell before use. It is usually necessary to strengthen the maintenance of refrigeration equipment, and it is strictly forbidden to dump and unload goods to prevent damage to the pipeline and cause refrigerant leakage. During the cold processing of food, the cold storage warehouse must be kept at a certain temperature, and frozen food must not be transferred or stored. 3) How to remove peculiar smell in cold storage
Ozone method. Ozone has a strong oxidizing effect, which can not only eliminate the peculiar smell of the cold storage warehouse, but also prevent the growth of microorganisms. The ozone generator can be used to eliminate the peculiar smell of the warehouse.
If foods with a lot of fat are stored in the cold storage, ozone treatment should not be used to avoid fat oxidation and rancidity.
Formaldehyde method. Remove the goods from the cold storage warehouse and use 2% formaldehyde solution (ie formalin solution) for disinfection and odor removal.
Vinegar method. The cold storage warehouse where the fish was installed has a strong fishy smell. It is not suitable to load other foods, and other foods can only be loaded after thorough cleaning to eliminate fishy smell. The general method to remove fishy smell is to use vinegar.
The specific method is as follows: After the fish leaves the cold storage, remove the frost layer on the evaporation tube group and keep the temperature of the warehouse below 50℃, and then use 50-100 grams of vinegar for each cubic meter volume of the cold storage. The sprayer sprays into the warehouse, first close the warehouse door tightly, and turn on the blower intermittently to let the vinegar volatilize and flow in the warehouse, so that the vinegar can absorb a lot of fishy smell. Generally, the door of the cold storage is opened after about 4-24 hours, and the vinegar smell can be blown out of the storage with continuous blast for several hours.
